How did ships move pre-mechanisation (steam boat, engines, etc) without oarsmen?

Have you read 'Treasure Island', it has various scenes where shipmen use small boats to shuttle towards land from sea as big ships cant be anchored at the beach. Also they might have good "directional" sails to adjust the ship.
